Hello, I’m Chef Niko, and welcome to Kastra Recipes.
I created Kastra Recipes to preserve and share authentic Greek and Italian family recipes inspired by a lifetime of hands-on experience, cherished traditions, and a passion for Mediterranean cooking.
For me, cooking is much more than preparing food. It preserves traditions, creates lasting memories, and brings family and friends together around the table. Every recipe I share reflects the people, experiences, and values that have shaped my journey.
My Story
I was born in Thessaloniki, Greece, and immigrated with my family to the United States in the early 1970s. Although I built my life in America, I never left behind the flavors and traditions of my Greek upbringing. Notably, the inspiration for kstra Recipes began in those years.
My culinary journey began in a neighborhood New York City pizzeria, where I fell in love with old-school Italian cooking. Every day, I watched experienced chefs work with patience, discipline, and respect for simple ingredients. Those early lessons taught me that great food doesn’t come from complexity—it comes from quality ingredients, proper technique, and passion. In the end, this foundation contributed greatly to what you’ll find in Kastra Recipes.
Although I earned a Bachelor of Science in Computer Programming, I always knew the kitchen was where I belonged. Kastra Recipes honors that journey.
I never completed culinary school. Instead, I learned the traditional way by working alongside experienced chefs who generously shared their knowledge with me. Every kitchen became my classroom, every service taught me something new, and every mentor helped shape my approach to cooking. My education came through experience, hard work, and years spent in professional kitchens. This philosophy is at the heart of Kastra Recipes content.
A Career Built on Experience
As my experience grew, so did my opportunities. Kastra Recipes draws on that wealth of stories and lessons learned.
I operated family-owned coffee trucks serving fresh coffee, donuts, bagels, breakfast rolls, and a variety of pastries. Running that business taught me the importance of consistency, customer service, and starting every day with the same commitment to quality. All these values are also reflected in Kastra Recipes offerings.
Later, I opened a delicatessen specializing in American, Greek, and Italian cuisine. Every customer gave me another opportunity to refine my skills while preparing homemade food with care and authenticity. In a way, Kastra Recipes is a continuation of that devotion to quality and authenticity.
My interest in both hospitality and technology inspired me to develop a touchscreen point-of-sale system for the restaurant industry. Working closely with restaurant owners, chefs, and hospitality professionals gave me valuable insight into restaurant operations, kitchen management, and the business side of hospitality. Of course, those professional experiences inform my perspective throughout Kastra Recipes as well.
One of the highlights of my career was managing a New York City hospitality venue that combined a full-service restaurant, nightclub, and catering operation under one roof. I oversaw daily operations, supervised kitchen production, coordinated catering events, and managed staff in a fast-paced environment. That experience strengthened my leadership skills and reinforced the importance of teamwork, organization, and delivering exceptional service. These remain defining pillars of everything you’ll discover Kastra Recipes and the philosophy behind it.
Eventually, I returned to Thessaloniki, where I fulfilled another lifelong dream by opening my own café. Owning my café allowed me to combine everything I had learned throughout my career while welcoming guests with the same warmth and hospitality I had admired since my first days in the kitchen. All those memories are what Kastra Recipes shares with you now.
Looking back, every kitchen, every business, every challenge, and every mentor helped shape the chef I am today. More importantly, they taught me that the best meals are rooted in tradition, prepared with quality ingredients, and shared with the people we love—this is the spirit of Kastra Recipes.
Why I Created Kastra Recipes
Today, I’m retired from the hospitality industry, but my passion for cooking remains as strong as ever. That passion became the driving force behind Kastra Recipes.
