Zuchcini Batter
- 1 kg zucchinis grated
- 3 scallions thinly sliced
- 1/2 bunch dill finely chopped
- 1/2 bunch parsley finely chopped
- 1/2 bunch mint finely chopped
- Olive oil for frying
- Salt and black pepper to taste
- 250 g all-purpose flour
- 1 packet baking powder 16 g
- 200 g graviera cheese grated
- 100 g manouri cheese crumbled
- 100 g feta cheese crumbled
- 2 eggs beaten
For the Yogurt Sauce
- 1 cup strained Greek yogurt
- 1 tbsp olive oil
- A splash of white vinegar
- A few mint leaves finely chopped
- Salt to taste
Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for 30 minutes to release moisture. Squeeze out the excess liquid.
In a large mixing bowl, combine the grated zucchinis, scallions, herbs, cheeses, eggs, flour, baking powder, salt, and black pepper. Mix until a thick batter forms.
Heat olive oil in a deep skillet over medium heat.
Drop spoonfuls of the batter into the hot oil and flatten slightly with the back of a spoon. Fry until golden brown on both sides, about 3-4 minutes per side.
Transfer the fritters to a plate lined with paper towels to drain excess oil.
Serve hot with the yogurt sauce on the side.
Baking Instructions for Zucchini Fritters
Baking is a healthier alternative to frying, giving the fritters a crispy outer layer without the need for excess oil. Here's how to do it:
Instructions:
- Preheat the oven: Set your oven to 400°F (200°C).
- Prepare the baking tray: Line a large baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
- Shape the fritters: Form the zucchini mixture into small patties (about 2 tablespoons each) and gently flatten them. Place them about 1 inch apart on the prepared baking sheet.
- Brush with olive oil: Lightly brush the top of each fritter with a small amount of olive oil. This helps them brown nicely in the oven.
- Bake: Bake for 20–25 minutes, flipping halfway through baking. The fritters should be golden brown and slightly crispy on both sides.
- Cool and Serve: Let them cool for a few minutes before serving with the mint yogurt dip.
Tips:
- For extra crispiness, broil the fritters for the last 2–3 minutes.
- Use a cooling rack placed over a baking sheet for even airflow around the fritters.
- These baked fritters store well in the refrigerator and can be reheated in the oven.
Nutrional Values:
- When baking instead of frying, the calorie count per serving for these zucchini fritters is approximately 210–220 kcal per serving (depending on portion size). This reduction is due to using less oil compared to frying. Baking also retains the delicious cheesy flavors while being lighter and healthier.
- A typical baked zucchini fritter weighs around 70-80 grams per portion. This estimate includes the cheese blend, zucchini, and other ingredients, yielding about 8 fritters for the recipe.
