Politiki Salata is a refreshing and crunchy Greek coleslaw made with cabbage, carrots, and celery, dressed with a tangy lemon vinaigrette. Perfect as a side dish or a light, healthy meal.

For the Salad
- 800 gram white cabbage finely shredded
- 400 gram red cabbage finely shredded
- 4-5 medium carrots peeled and grated
- 3-4 celery stalks finely sliced (or 300 g celery root, grated)
- 2 tsp salt
- 1 Juice of lemon
- 1/2 bunch Fresh parsley finely chopped
- 4 Pickled or grilled red peppers optional, for garnish
For the Dressing
- 4 garlic cloves minced or grated
- 45 ml white vinegar
- 80 ml olive oil
- 1/2 tsp pepper
Prepare the Vegetables: In a large bowl, combine the shredded white and red cabbage. Sprinkle with salt and massage gently to soften.
Add the grated carrots and celery. Toss to mix evenly.
Make the Dressing: In a small bowl, whisk together the garlic, vinegar, olive oil, and black pepper.
Combine: Drizzle the dressing over the vegetables. Add lemon juice and parsley. Toss thoroughly to coat.
Chill and Serve: Cover the salad and refrigerate for at least 1 hour. Garnish with pickled peppers if desired. Politiki Salata is best served cold.
