Greek-Style Lamb Chops

Ingredients
  

For the Marinade

  • 1/4 cup extra virgin olive oil
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 3 garlic cloves minced
  • 2 tsp dried Greek oregano
  • 1 tsp dried thyme or rosemary
  • 1 tsp paprika optional
  • 1/2 tsp ground cumin optional
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

For the Lamb Chops

  • 8 lamb chops loin or rib
  • Fresh parsley finely chopped (for garnish)

Instructions
 

Prepare the Marinad

  • In a small bowl, whisk together 1/4 cup olive oil, 3 tbsp lemon juice, 3-4 cloves of crushed garlic, 2 tsp dried oregano (or 1 tbsp fresh oregano), 1 tbsp fresh rosemary (or 1 tsp dried rosemary), 1 tsp salt, and 1/2 tsp freshly ground black pepper.

Marinate the Lamb Chops

  • Place the lamb chops in a shallow dish or a resealable plastic bag. Pour the marinade over the chops and ensure they are evenly coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, preferably overnight for enhanced flavor.

Preheat the Oven or Grill

  • Oven Method: Preheat your oven to 400°F (200°C).
  • Grill (Broiler) Method: Preheat the grill or broiler to high heat, ensuring the rack is positioned about 4-6 inches from the heat source.

Prepare the Lamb Chops

  • Remove the lamb chops from the marinade and discard the marinade. Pat the lamb chops dry with paper towels for a nice sear.

Cooking in the Oven

  • Place the marinated lamb chops on a baking sheet lined with aluminum foil or parchment paper for easy cleanup. Roast the chops in the preheated oven for 12-15 minutes, flipping halfway through, until they reach your desired level of doneness (about 130°F/54°C for medium-rare).

Cooking under the Grill (Broiler)

  • Place the lamb chops on a broiler pan or a wire rack over a baking sheet. Broil for 4-5 minutes per side, depending on thickness and desired doneness. Check for internal temperature using a meat thermometer (130°F/54°C for medium-rare).

Rest the Lamb Chops

  • Once cooked to your preferred doneness, remove the lamb chops from the oven or grill. Let them rest for 5 minutes before serving to ensure they are juicy and tender.

Serve

  • Serve the Greek lamb chops with a drizzle of olive oil, a sprinkle of fresh herbs, and your favorite Mediterranean sides like roasted vegetables or a Greek salad.

Notes

  1. For the best flavor, marinate the lamb chops for at least 1 hour, but you can also marinate them overnight in the refrigerator.
  2. Adjust the amount of garlic and lemon according to personal taste.
  3. Serve with a side of roasted vegetables or a Greek salad for a complete meal.
  4. Of course, these are the best when cooked on the barbecue grill!
