For the Chicken Souvlaki
- 1 ½ pounds 700g boneless, skinless chicken breast or thighs, cut into strips
- ½ cup olive oil
- ¼ cup fresh lemon juice
- 3 –4 garlic cloves minced
- 2 tablespoons red wine vinegar optional
- 1 tablespoon dried oregano or 2 tablespoons fresh
- 1 teaspoon ground cumin
- 1 teaspoon paprika smoked or regular
- ½ cup Ariani Greek yogurt drink, or substitute with ⅓ cup Greek yogurt + 3 tablespoons water
- Salt and freshly ground black pepper to taste
For the Sandwich Assembly
- 4 large pita breads
- 1 cup tzatziki sauce
- 1 cup shredded lettuce
- 2 ripe tomatoes sliced
- Optional: thinly sliced red onion
- Optional: feta cheese crumbles
For the Oven-Baked Fries
- 4 medium potatoes about 600g, peeled (optional) and cut into thin strips
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder optional
- ½ teaspoon paprika optional
Marinate the Chicken
In a large bowl, whisk together the olive oil, lemon juice, garlic, red wine vinegar (if using), oregano, cumin, paprika, Ariani (or yogurt mix), salt, and pepper.
Add the chicken strips, toss to coat, cover, and refrigerate for at least 1 hour (up to 24 hours for maximum flavor).
Prepare the Fries
Preheat the oven to 425°F (220°C).
Soak the sliced potatoes in cold water for 30 minutes to remove excess starch (optional but recommended).
Drain and dry the potatoes thoroughly. Toss them with olive oil, salt, black pepper, garlic powder, and paprika.
Spread the fries in a single layer on a parchment-lined baking sheet, leaving space between each fry.
Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
Cook the Chicken
Heat a grill pan, outdoor grill, or skillet over medium-high heat.
Grill the chicken for 3–4 minutes per side, until cooked through and lightly charred.
Assemble the Sandwiches
Warm the pita breads slightly by grilling or microwaving.
Spread a generous layer of tzatziki sauce on each pita.
Add grilled chicken strips, followed by shredded lettuce, tomato slices, and any optional toppings.
