Green peas & artichoke stew known in Greece as arakas me aginares. It is known as a lathera dish. You only need a few ingredients. It’s a delicious vegan main dish or a great side dish for any meat. However, you can change up the herbs, use frozen or fresh peas, and even throw in some grated garlic to make it your own. You’re going to love it as much as I do. It is very easy to make and tastes even better the next day. So make extra!
How to make the Green Peas & Artichoke Stew
This green peas & artichoke stew is made with simple ingredients. Unless you have access to fresh artichokes and know how to clean it to the center or heart, it may be easier to purchase frozen along with the peas. A bag of artichoke hearts, about 700 grams, should suffice. Of course, fresh is best! I remember my grandmother would clean the fresh artichokes with a small paring knife, one by one. It is an art in itself to be able to do it without destroying the heart! Mom would boil the leaves until soft and let us eat the tender parts with an oil-lemon dip. Felt like such a treat. Great memories!
The rest is simple: onions, scallions, carrots, lemon, a bit of dill, olive oil are all that is needed to make this out of the ordinary stew. Kali Orexi!

Green Peas & Artichoke Stew
Ingredients
- 1 onion -thinly chopped
- 1/2 bumch of scallions – thinly chopped
- 1 carrot – cubed
- 1 potato – cubed (optional)
- 500 grams green peas
- 700 grams artichoke hearts
- 1/2 bunch chopped dill
- 125 ml olive oil
- 500 ml vegetable broth
- 1 juice of lemon (1 whole)
- salt and pepper to taste
Instructions
- Add 63 ml of the olive oil (about half of the amount – approx. 1/4 cup), onions and scallions to a pot and sautee over medium high heat until soft. About 3-5 minutes. Season with a pinch of salt.
- Pour half of the vegetable broth,(approx. 1 cup or 250 ml), potatoes, peas, and carrots and cook for 20 minutes. Lower heat to medium.
- Add the artichcoke hearts, dill, salt and pepper into the pot, mix well. Cook over medium heat for another 30 minutes until tender.
- Add a bit more broth, if needed, to the pot if mixture seems too dry.
- When nearly done, add remaining olive oil and the juice of one lemon into the pot and mix. Taste and adjust the seasoning if needed.
Notes
- If using fresh peas, may need a bit more cooking time until peas are tender.
- Keep in mind 500 grams is equivalent to about 1 pound of peas.
- Also keep in mind that the 700 grams of artichoke hearts is equivalent to 1 1/2 pounds.
